Ham croquettes with mustard sauce

Agreement : Versant Blanc

Ingredients :

  • 1 cup chopped ham

  • 1 1/2 cups mashed cooked potatoes
  • 1/2 cup crumbled white bread moistened in 1/2 cup milk 
  • 2 green onions, chopped 
  • 1 egg
  • 1/2 tablespoon wholegrain mustard 
  • 1/2 tbsp. dijon mustard
  • 1/2 tbsp. honey
  • 1 tbsp. dill or fresh coriander 
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Mustard sauce 
  • 1 cup mayonnaise
  • 1 tbsp. dijon mustard
  • 1 tbsp. old-fashioned mustard 
  • 1/2 tbsp. honey
  • 1 tbsp. dill

    • 1 cup seasoned Italian breadcrumbs 

    • 1 cup canola oil for frying

     

    Instructions :

    Put the crumbled white bread with the milk and soak for 15 minutes, then squeeze it well to remove the milk and keep the bread soaked.

    Mix ham, potatoes, bread with milk, green onions, mustard, honey, dill, salt and pepper.

    If the mixture is too wet, add 1/4 cup of breadcrumbs and mix coarsely.

    Start heating half of the oil in a pan over medium heat.  

    Make patties of about 1/3 cup and cover with Italian breadcrumbs.

    Fry 5 patties at a time for about 5 minutes per side until golden brown and set aside on paper towels.

    Serve with the mustard sauce.
