Give this delicious recipe a try—it features pork and apples, a combination that’s both comforting and unique. The juiciness of the pork, paired with the apple’s slightly sweet and fresh flavor, creates a perfect balance on the palate.

Ingredients
- 2.2 lb (1 kg) of trimmed pork shoulder, cut into large cubes
- 2 teaspoons (10 ml) of salt
- 1 teaspoon (5 ml) ground cumin
- 1 teaspoon (5 ml) of sweet paprika
- 1 teaspoon (5 ml) brown sugar
- ½ teaspoon (2 ml) ground coriander
- Freshly ground black pepper
- 1 ½ cups (375 ml) of Coteau Rougemont apple cider of your choice
- 1 medium onion, sliced
- 1 Quebec apple, sliced (no need to peel or core)
- 3 cloves of garlic, peeled and crushed
- 1 ½ cups (375 ml) store-bought barbecue sauce, of your choice
- Hamburger buns
- Spicy mayonnaise
- Arugula
- Slices of Swiss cheese
- 1 Quebec apple, cored and thinly sliced
- Fresh cilantro
Preparation
Place the pork cubes in a bowl. Mix the spices, then sprinkle them over the pork and toss to coat evenly. Refrigerate for at least 2 hours.
In a very hot skillet, brown the meat on all sides, then transfer it to the bowl of a slow cooker. Add the cider, onion, apple, and garlic. Stir well, cover, and cook on low for 8 hours.
Once the pork is cooked, use a slotted spoon to remove it and transfer it to a large bowl. Strain the cooking juices into a saucepan (discard the solids). Boil the cooking juices until reduced to ½ cup (125 ml). Shred the pork with a fork, then add the reduced cooking juices and barbecue sauce. Mix well to coat the meat. Taste and season with salt and pepper if needed.
To serve, warm the hamburger buns. Spread spicy mayonnaise and arugula on one half of each bun. Add the seasoned pulled pork, cheese, apple slices, and fresh cilantro leaves, to taste. Serve immediately.
