Agreement: Grand Coteau
Ingredients:
- 2 tablespoons vegetable oil
- 2 onions, peeled and quartered
- 675 g. (1 1/2 lb.) beef cubes
- 2 tablespoons all-purpose flour
- 1 liter (4 cups) beef broth
- 250 ml (1 cup) apple juice
- 1 red bell pepper, cut into strips
- 3 sprigs thyme
- 6 apples, peeled and quartered
- Salt and pepper
Instructions :
Preheat oven to 190°C (375°F).
- Heat the oil in a large saucepan. Add onions and sauté over medium heat for 3 minutes.
- Add beef cubes and sauté for 5 minutes.
- Season with salt and pepper. Sprinkle with flour and toss.
- Pour in stock and apple juice. Bring to a boil, stirring constantly. Stir in bell pepper, thyme and apples. Cover pan.
- Bake for 1 hour 30 minutes.
- Remove from oven and let stand 10 minutes before serving.
This recipe makes 4 servings. Preparation time: 15 minutes. Cooking time: 1h40 (+ 10 minutes rest).
