Lamb burger with goat cheese and mint mayonnaise

Ingredients for the dumplings 

  • 1 1/2 pounds lean ground lamb
  • 1 clove garlic, minced
  • 1 tablespoon mint, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander seeds
  • 1 tablespoon harissa (or hot sauce)
  • Salt and pepper to taste

Ingredients for the mint mayonnaise 

  • 4 tablespoons mayonnaise
  • 3 tablespoons plain yogurt
  • 1 teaspoon harissa
  • Juice of half a lemon
  • Zest of half a lemon
  • 1/2 bunch mint, coarsely chopped

Other ingredients 

  • 6 nice slices of goat's cheese such as Bûchette from fromagerie la Suisse Normande de Lanaudière (you can replace the goat's cheese with Gruyère)
  • 6 sesame burger buns
  • 1 cup arugula or spinach

Instructions

Combine mayonnaise ingredients and chill.

Mix dumpling ingredients and shape into 6 dumplings. Cook dumplings on the BBQ or in a frying pan for 6 to 7 minutes on each side. Butter buns and toast.
