Lamb burger with goat cheese and mint mayonnaise

Ingredients for meatballs 

  • 1 1/2 pounds lean ground lamb
  • 1 clove garlic, minced
  • 1 tablespoon chopped mint
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander seeds
  • 1 tablespoon harissa (or hot sauce)
  • Salt and pepper to taste

Ingredients for the mint mayonnaise 

  • 4 tablespoons of mayonnaise
  • 3 tablespoons plain yogurt
  • 1 teaspoon harissa
  • Juice of half a lemon
  • Zest of half a lemon
  • 1/2 bunch of mint, coarsely chopped

Other ingredients 

  • 6 nice slices of goat cheese such as the Bûchette de la Suisse Normande from Lanaudière (you can replace the goat cheese by Gruyère cheese)
  • 6 sesame burger buns
  • 1 cup arugula or spinach


Mix the mayonnaise ingredients and set aside in the refrigerator.

Mix the ingredients for the meatballs and form 6 meatballs. Cook the meatballs on the BBQ or in a pan for 6 to 7 minutes on each side. Butter the breads and toast them.
