Ingredients for the dumplings
- 1 1/2 pounds lean ground lamb
- 1 clove garlic, minced
- 1 tablespoon mint, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander seeds
- 1 tablespoon harissa (or hot sauce)
- Salt and pepper to taste
Ingredients for the mint mayonnaise
- 4 tablespoons mayonnaise
- 3 tablespoons plain yogurt
- 1 teaspoon harissa
- Juice of half a lemon
- Zest of half a lemon
- 1/2 bunch mint, coarsely chopped
Other ingredients
- 6 nice slices of goat's cheese such as Bûchette from fromagerie la Suisse Normande de Lanaudière (you can replace the goat's cheese with Gruyère)
- 6 sesame burger buns
- 1 cup arugula or spinach
Instructions
Combine mayonnaise ingredients and chill.
Mix dumpling ingredients and shape into 6 dumplings. Cook dumplings on the BBQ or in a frying pan for 6 to 7 minutes on each side. Butter buns and toast.
