Perched atop Mont Rougemont, our maple grove is a unique gem where Sèves, an exceptional fortified maple wine, is born. Made from fermented maple sap, enriched with sap concentrate, and then fortified with local apple brandy, it is aged for two years in oak barrels. This long aging process reveals the full richness of our artisanal expertise and the unique character of our terroir.
Winemaker’s Note
Its luminous, brilliant golden color hints at a wine of great finesse. The nose opens with delicate notes of fresh apple, which evolve into aromas of maple sap, white flowers, and a subtle hint of oak. On the palate, the balance between richness and freshness is remarkable. Flavors of vanilla, dried fruit, and light caramel intertwine in a full-bodied, silky texture, offering a long, elegant, and indulgent finish.
