The apples used to make this Grande Réserve ice cider are left on the tree until the heart of winter, then harvested while frozen and cold-pressed using the cryo-extraction method. This process, which is emblematic of Quebec, naturally concentrates the fruit’s sugars and aromas. The must is then slowly fermented and aged for two years in French oak barrels, where it develops its full complexity and aromatic depth.
Winemaker’s Note
Its golden color with amber highlights hints at a cider of great nobility. The nose is intense and complex, revealing aromas of candied apple, ripe pear, and peach, enhanced by notes of acacia honey, vanilla, and sweet spices from the aging process. On the palate, the richness is beautifully balanced by lively acidity, offering a full-bodied and silky texture. The long, refined finish reveals delicate toasted notes that elegantly extend the tasting experience.
